New Mexican Black Bean Salad Recipe

Good food is something you just cannot resist. When it comes to Mexican food, the temptation is even more serious. It doesn't take too much time or too much effort to prepare some of those recipes, and you will be more than satisfied. For example, you could try this entirely different Mexican black bean salad recipe. It's not something you will find in any Mexican restaurant, but it is based on similar principle.

So, for this lovely salad you need to prepare following ingredients: One can black beans and sweet corn each, one fresh green onion, tiny sliced, one teaspoon white vinegar, two spoons olive oil, red sweet pepper, chili powder, salt, pepper, one avocado, two minced garlic cloves, two cooked eggs, one lime, two in skin cooked potatoes. Peel and slice eggs and potatoes.

So, first you have to slice your onion and mix the slices with salt, white vinegar and lime juice. Cover the bowl and leave it aside or, even better, in your fridge. Rinse and drain beans and corns and combine all other ingredients together. In the end, add prepared onions and more salt or oil, or other spices of your choice, if needed. Coriander leaves will round this combination.

This recipe contains really unusual ingredients for this type of salad, but it tastes great. You will need one can black beans, one can sweet corn, 250 grams spinach, as young as possible, 200 grams feta cheese, three toast slices, salt, pepper, olive oil, lime juice and garlic, as well as one or two chili peppers. Rinse and dry beans and corn.

Cut toast into cubes and bake in greased pan sprinkled with salt and oregano for a few minutes. Prepare your dressing, mixing together olive oil, lime juice, spices and sliced chili pepper and minced garlic. Cut feta cheese into small cubes, add all other ingredients and mix well. Add more spices or oil if you think it is needed.

For this unusual recipe you will need a grill. Take one small eggplant, one zucchini, one green and one red sweet pepper, one can black beans and a can of sweet corn, one large spoon of acetto balsamico, olive oil, three cloves minced garlic, two tortillas, one avocado, juice of one or two limes and grated hard cheese, and, of course, salt, pepper and chili powder.

So, slice and dice what has to be sliced and diced first. Grill eggplant slices or strips, zucchini and sweet green pepper, and then grill tortilla stripes as well. In the meantime, make a dressing. Combine oil, juice, spices, garlic and acetto. Mix well and add grilled ingredients, while still hot, and all other ingredients. Sprinkle with grated cheese and leaves of basil or coriander.

Or, you can make things even simpler. Take one can black beans and one can of tiny corns, one avocado, lime juice, minced garlic, salt, pepper and chili powder, olive oil, one red sweet pepper, dried tomatoes and fresh green salad. Slice pepper, avocado and salad, make dressing and mix all ingredients together. Simple, fulfilling and delicious meal you can prepare in less than ten minutes.
