Business Catering For Corporate Events

By Dennis Cook

Companies hold so many different types of events - conferences, meetings, seminars, and customer appreciation functions are just a few of the more common gatherings. The groups of people who attend these all have one thing in common - they are hungry and they need to be fed, especially if the functions are more than a few hours long. Business catering is a booming business that is designed to provide meals and snacks to these individuals.

Morning events usually require gallons of fresh, hot coffee. Sweet rolls, fresh fruit, and juices may be offered for a casual continental breakfast. If a more bountiful meal is required, scrambled eggs, bacon and sausage, breakfast potatoes, and biscuits may be offered.

Mid-morning and mid-afternoon breaks will require much more coffee. Snacks can also be provided. These can consist of cookies, brownies, candy, and maybe hot and/or cold tea. This is an aspect of this type of catering that can be very creative. These breaks can have a theme that will feature specific foods.

Some of these may include a popcorn bar with many flavors of popcorn - white cheddar, sea salt, and caramel could be just a few of the selections offered. They could have a movie theme and set out boxed candy, buttered popcorn straight from a machine, and sodas. A coffee station may be set up complete with flavored coffees or coffees with flavored syrups. Chocolate may also be a theme that is used - all types of chocolate candies and snacks could be set up for attendees to enjoy during their breaks.

Mid-day lunches are usually set up as buffets. These buffets may have some type of theme that appeals to the client and the attendees. It could be a fajita station, a deli buffet, Asian foods, a Mexican buffet, or even hot dogs, brats, and hamburgers. Desserts are usually very simple such as cookies, some type of bar, or brownies that can be easily moved into the meeting rooms if necessary. They can also be left out for the afternoon break.

Sometimes working lunches are offered to the attendees of these meetings. They usually consist of some type of boxed lunch that is simple and easy to consume. Caterers have become truly creative with these and try to avoid the standard fare of plain sandwiches. They may provide more interesting foods such as tuna on a croissant with a fresh fruit cup and kettle-cooked chips or a submarine sandwich on a hoagie bun with a piece of whole fruit and sun chips.

At the end of the working day, an open bar with appetizers and mini desserts may be offered to the attendees. This will allow them to network further and continue any business discussions they may have engaged in during the day. The bar could include wine, beer, mixed drinks, and sodas. The appetizers could be a simple array of meatballs, chicken wings, fresh vegetables, fresh fruit, and mini brownies and cookies.

This type of catering can be a huge opportunity for a caterer. It is far less stressful than providing services for a wedding and can be much steadier work. The potential for growth is almost unlimited if quality products and services are provided to the corporate customers.
