Most people associate catered meals with boring food unless the event is being catered by an upscale operation or restaurant with a strong following. However, this is not always the case, as some food service establishments take pride in their product. Those who have chosen a Mexican food catering company are often impressed by the wide selection.

While most think of Mexican cuisine as either spicy or loaded with cheese, there are many classic dishes that can be enjoyed by those old or young. Many arroz con pollo, or chicken and rice, recipes call for mild seasonings like ancho chilies, smoked paprika, and a variety of herbs used in a lot of dishes. There are many dishes that use lowfat cheeses like cotija and queso fresco.

Other than the traditional dishes that are covered in cheese or a rich sauce, there are seafood dishes that are paired with familiar companions. Hominy grits are somewhat similar to cornmeal used in American cooking and can be found in appetizers, soups, and meatless entrees. Because the flavor is mild, it lends itself well to a number of seasonings.

More catering companies are learning to make simple changes that retain the authentic flavor. Another example of this is using more canola and virgin olive oil instead of lard.

Some people would rather use the services of a caterer who is experienced in preparing Mexican cuisine because of the labor that goes into most dishes. This type of cooking is not like the neighborhood fast food franchises. Anyone who does this regularly will say that some recipes take more than an hour to prepare.

For instance, the homemade tamales cannot just be wrapped together in a corn husk and cooked in a microwave. Unless one is making a cheese and chili pepper recipe, most meat versions entail using a filling that has simmered for a few hours before being chopped down enough to fill a bed of masa flour. Even vegetarian versions taste better when the corn, bell pepper, and tomatoes have spent a few hours roasting over an open fire.

As the merging of cultures is becoming more common, chefs and home cooks are finding ways to make dishes appeal to different groups of people. Recipes that once called for shredded beef or pork are now being replaced by jackfruit, a fruit that is growing in popularity as a meat alternative. Instead of using beef or pork fat, virgin olive oil is being used more often for frying and sauteing.

Eating freshly made desserts is a true treat for those who like sweets. Depending on the recipe, it can take more than an hour to make a good flan, or Mexican style custard. Sweet rice, which is made with white rice, raisins, and cinnamon is one of the healthier desserts that is also full of flavor.

Choosing a caterer that believes in authenticity is a wise choice, as opposed to someone who just offers low rates. Many of the dishes listed here do not cost a lot to prepare and they offer a lot of flavor for the money. If someone is looking for a different meal option for event guests, this should be considered.
