Nothing Will Make Your Mouth Water More Than Authentic Neapolitan Pizza

By Harriett Crosby

Imagine the smell of pizza wafting past your nose and the beauty of basic ingredients handcrafted to make the best meal you've ever eaten. The simplicity of authentic Neapolitan pizza is what makes it so delicious.

As the name implied, Neapolitan pizza was created in Naples, Italy. Actually that is the birthplace of all styles of this dish. What an extraordinary and divine item to be associated with. This dish comes in many forms, but in Naples it is more than a snack or a quick dinner on the go, it is an art form. Those that make it do more than just throw the dough up in the air.

The city of Naples is one of the oldest in Italy. Surrounding a very busy port, there have been invasions and visitors from time eternal and they all have put their stamp on this cities charm and beauty. The economy of this place is mostly from the sea; however, its distinction comes from being the place where Neapolitan pizza was born.

The crust is the key. Made with wheat flour, some salt, yeast, and water the dough must be light, fluffy, and delicious. Pizza making is serious business in Naples. The job of pizzaiolo is a respected, time-honored job that is a balance of flavors with incredible taste and the crust is their trademark that is hand kneaded and tossed to create a sublime base for the toppings.

Making a proper pie means you must understand the simplicity of the flavors. A true pie from Naples has very few ingredients. A light layer of olive oil is followed by a well flavored marinara sauce. The sauce is itself lightly flavored with garlic, basil, and tomatoes. After the sauce there is simply mozzarella cheese that is either cow or buffalo.

For real Neapolitan pizza the ingredients are hand-picked and are grown as local as possible. Once you've built the pizza, then the art of baking it begins. These crusts do not cook for a long period of time. Because of the subtlety of the ingredients, the dough cooks fast and you just want the cheese to lightly melt.

This amazing foodstuff began as a dedication to the Italian flag. The simple color of red sauce, white mozzarella, and green basil was a dedication to the country, and some visiting nobles to Naples. Yet even though there is a standard topping combination for this dish, you can add mushrooms and sausage for those wanting a bit more. However, the Margherita basic pizza is by far the most requested and enjoyed.

If you are lucky enough to travel to Naples then nothing will make your mouth water more than authentic Neapolitan pizza, however, even if you can't make it to Italy you can find local pizzaiolo's that can give you a taste of Italy on a perfectly made crust. As you savor the flavor of the sauce and cheese, close your eyes and imagine you are sitting next to the waters of Naples as you enjoy the perfect slice.
