A wooden spoon would be more preferable to a metallic one.

Choose the right day to make your sweets. Some weather conditions are more favorable than others. Makings sweets on a hot, sunny day is recommended over humid or rainy days. This is because the humidity in the air will affect the crystallization of the sugar. This means that you have to plan beforehand about the best days to make sweets.

Heating the mixture to the right temperature is important. Use a thermometer to ensure that the temperature is accurate according to the recipe. Trying to guess the temperature by just looking at the mixture boiling is not recommended. This is because it is unlikely you will get the temperature just right. There are many types of thermometers in the market. Find something that works for you.

You have to know how to control the size of the crystals. This will prevent your sweets from being too grainy. To do this, keep stirring the mixture while cooking. Try to avoid splashing the mixture on the sides of the pan, to avoid sugar crystals from forming on the sides of the pan. You can use a brush which has been dipped in warm water to brush off any crystals on the sides of the pan.

If your ingredients include chocolate, the melted chocolate has to be properly handled so that it does not get messed up. The chocolate should not come into contact with water, otherwise it will end up being clumpy. Ensure to dry all the bowls, spoons and your workstation.
